Ingredients
  • 4 Tbsp Pure Maple Syrup Balsamic
  • 2 Tbsp Red Wine Vinegar Pinot,
  • 1 tsp Seed Mustard
  • 4 Tbsp Extra-Virgin Olive Oil EVOO Arbequina, Hoji
  • 2 Tbsp Shallots finely minced and divided
  • 1/2 tsp Himalayan Salt
  • Black pepper to taste
  • 4 slices Bacon cooked and crumbled, divided
  • 2 qts spinach

Instructions
  1. Place spinach in serving bowl. In saucepan, put remaining ingredients, minus the EVOO, and bring to medium heat. Gently warm while whisking. Remove from heat before it simmers. Allow to cool for a minute, and whisk in EVOO to emulsify. Adjust seasoning. Gently dress spinach with warm vinaigrette and top with remaining bacon and shallots.

  1. Combine red wine, olive oil and seasoning, drizzle over fruit. Toss to mix. Let stand, refrigerate, for several hours. Drain and serve in lettuce cups. Makes 4-6 servings.
  2. Twist: To sweeten the deal, try a Balsamic Vinegar -- Pomegranate Quince or Cranberry Pear. At the brilliance of citrus by substituting EVOO for Lime Olive Oil.

  1. Measure and combine all ingredients together, blending well.
  2. Twist: Red skin potato salad, or marinade for vegetable salad of tomatoes, onion, yellow squash, zucchini, bell peppers and mushrooms. Dry herbs can be added to this vinaigrette: basil, thyme, oregano, and Tarragon. To spice it up add crushed red chilies, cayenne pepper, chili powder, jalapenos, or use Harissa Olive Oil.

  1. * If you are using fresh or frozen berries, you'll want to cook and strain them and add a little honey or sugar. The jam is ready to use. All ingredients can be put together in one container, blend well.
  2. Twist: Toss with salad, drizzle over fresh fruit salad with grilled shrimp or chicken. (be sure to marinate the meat in the vinaigrette first). Add cayenne pepper, jalapenos, dried red chilies, to create a slight heat to the dressing.

  1. Soak the ancho chilies in hot water for 1 hour or in tap water over night. Drain well and remove the stems and seeds. Chop. Blend with vinegar and strain. Add all the other ingredients and blend well. The oils can be added at the start. If you want a little more kick add some crushed red chilies or cayenne pepper.
  2. Twist: Used on pasta salad or greens of choice. For added heartiness, add chicken or beef.
