Naples Summertime Steak Verde Sauce

Instructions
  1. Puree, in a food processor, all the herbs, mustard, zest, capers, salt and pepper. Then add olive oil and lemon juice until mixture can be spooned.
  2. After grilling steak place steak on plate, spoon mixture over steak and tent with aluminum foil for 10 minutes. Remove aluminum foil and serve.

  1. Blend vinegar, mustard, garlic powder, white pepper, salt and tarragon. Stir in extra virgin olive oil. Let dressing stand 2 hours, then refrigerate. Use as much as is needed, refrigerating remainder for use as needed up to 2 weeks. Makes 2-3 cups.
