  1. Cream the cream cheese, and The Olive Twist Herb Dipping Blend. Best if you let it rest over night. Slice the cucumber and plate. Half the tomatoes. Place a dollop of cream cheese mixture on top of cucumber. Wedge a tomato half in the cream cheese.

TIP: for a creamier dip use 1/2 c Mayonnaise and 1/2 c sour cream with 2 Tablespoons of the Olive Twist Herb Dipping Blend

Twisted Artichoke Dip – er dinner?

This dip was just a little something to eat after a long day of filling bottles!  It hit the spot!  Hope you enjoy it as much as we did.

 

Twisted Artichoke Dip

1 Tbsp. The Olive Twist butter olive oil
1 Tbsp. The Olive Twist garlic olive oil
1/8 cup flour
3/4 cup milk
1/4 cup heavy cream
1 tsp Garlic & Herb Blend
Salt to taste
Dried Thyme to taste
Dash of spicy red pepper powder

½ cup shredded Gruyere cheese*
¼ cup shredded Mozzarella cheese
2-3 Tbsp. freshly grated Parmesan Cheese*

1 Tbsp. The Olive Twist garlic olive oil
2 Tbsp. finely chopped onion
1 Tbsp. finely chopped red pepper
3 cups freshly chopped spinach
7 oz. jar roasted artichoke hearts, drained and chopped
½ cup shredded Mozzarella cheese


In an oven proof skillet, heat over low-medium heat, butter and garlic olive oil. Slowly add flour, stirring to mix the oil with the flour. Once mixture is blended, add ½ cup of milk and cream at a time. Stirring until mixture is thickened. Season to taste. Add the shredded cheese and set aside to allow the cheese to melt.


In a separate skillet, heat over low-medium heat, garlic olive oil. Add chopped onions, peppers and sauté until tender. Add spinach and artichokes and sauté until spinach is wilted.


Blend the spinach mixture into the cheese mixture. Place the iron skillet into the oven at 500 degrees and allow the top to brown lightly. Remove from oven and let cool. Serve warm with tortilla chips or pita chips.

Optional: add smoked chicken pieces and/or shiitake mushrooms to the recipe for more depth in flavor.

  1. Whisk two tablespoon of lemon juice with 1/3 cup of olive oil and sea salt in a small bowl. Add the thinly sliced onions and toss to coat and set aside.
  2. Preheat the grill to medium or heat a grill pan on the stove top over medium-high heat. With a pastry brush, lightly brush both sides of each slice of bread with the EVOO. Place the bread on the grill and toast until light golden brown and grill marks appear, flipping once during the process (take care not to burn the bread).
  3. While the bread is still very warm, rub the cut garlic clove over both sides of the bread slice. Allow the bread to cool completely, then begin layering by adding a slice of avocado. Brush the sliced avocado with a small amount of the onion-lemon-olive oil mixture, and a grind of fresh pepper. Add the smoked salmon, and top with a few slices of marinated onions and a sprinkle of chopped parsley.
  4. Twist: Flavored olive oil would add an extra POP of flavor to this dish. Tuscan Herb, House Blend, Rosemary. For an added flavor and a kiss of sweetness use a balsamic reduction to the top!

  • 1/2 cup Arbequina EVOO click on this ingredient to purchase
  • 1 sprig Basil fresh, washed & dried
  • 1 clove Garlic fresh & smashed
