  1. Place chicken between 2 pieces of plastic wrap, with a mallet pound until 1/4" thick. in a shallow dish place the flour and herbs. Dredge the chicken cutlets through the flour mixture and place in a skillet with heated oil. Brown each cutlet until golden and no longer pink. Set aside.
  2. IN THE SAME skillet, add the balsamic vinegar and mushrooms to make a gravy/sauce. The sauce is wonderful on the cutlets OR on mashed potatoes.

  1. Add all the ingredients together and blend well. Walnut pieces can also be added before serving.
  2. Twist: Add a smidgen of cinnamon. Top on greens or cut apples. Spice it up a bit with crushed red chilies or cayenne pepper. Play with the balsamic vinegar flavors -- use Cinnamon Pear instead of Red Apple

  1. Tear lettuce into bite-size pieces and place in large bowl. Add green onions, cucumber, tomatoes, pepper, radishes, parsley, cheese, and olives. Combine oil, vinegar, and garlic, and season to taste with salt and pepper, blending well. Pour dressing over salad just before serving and toss lightly but thoroughly.
  2. Twist: Use Traditional Balsamic Vinegar, or for a crisper flavor use a White Balsamic -- plain or flavored.

  1. Measure all ingredients together and blend everything EXCEPT the cheese. Crumble this well and mix in by hand. If you blend it, the vinaigrette will become creamy.
  2. Twist: Add tomatoes, cucumber slices or red onions. Also pairs nicely as a topper for grilled steak, or chicken wings

  1. Preheat oven to 350º if you have thick pork chops (thinly sliced chops can be cooked on stove top) In a trio of bowls--in this order, put parm cheese, the eggs, and bread crumbs in their own bowls. Whisking the eggs together . Salt and pepper the chops. Dip the chops in the cheese, pat the cheese to the chop, dredge in the eggs, and then dip the chops in the breadcrumbs. Pressing and coating thoroughly. Heat the oil and the butter in a very large skillet over medium heat. Add the pork chops and cook until golden brown on the first side -- 6 minutes. Adding more oil if necessary. Flip the chops and cook until the other side golden. You want pork to be at least 150º. You may finish baking thick chops in the oven to reach the 150º 10-12 minutes. Serve with pasta, risotto, or Italian Salad
